This worked out very well indeed.

Fried flounder fillet
steamed fresh broccoli with balsamic vinegar

I breaded the fillets very, very lightly - just one bare coat of matzo meal seasoned with cracked pepper and rosemary, with no eggs at all - in olive oil, and served the broccoli with a drizzle of balsamic vinegar.
