Dinner Tonight

Veggie Fajitas (all but vegan)

One large red bell pepper
One half large Spanish onion
Olive oil
Chili powder/chili flakes
One avocado
One lime
Tomato-basil wraps

Cut the pepper and onion into long strips. Heat the oil in a frying pan and add spices to taste. Other spices would probably work, too. These were on hand. Put the veggies in the hot oil and toss until the spiced oil covers them. Add a half cup of water. Let cook until the water boils out, and then stir until veggies are soft and starting to brown.

Quarter the lime and cut the avocado in to eight slices. Take a wrap. Add two pieces of avocado in the center, then pile on the cooked onions and peppers. Add a squeeze of lime and a dollop of yogurt. Wrap.

Very yummy.
