I'm getting Shabbat off

Yesterday, when I was in a local kosher supermarket getting stuff for dinner (my take on shepherd's pie - ground beef, onions and peppers sandwiched between two layers of mashed potatoes), a friend of mine on the line next to me asked what if I'd gotten my food for Friday night. I hadn't. We're going to her house.

Later, as I was cooking the shepherd's pie, my husband's teacher called. He's a lovely man who lives about a block away. And we're going to their house for lunch.

Which is good because I was having a problem figuring out what to make.

We should get wine to bring them.

Tonight's main course? Taco casserole.

1 can chili beans (low sodium)
1 17 oz jar extra hot extra chunky salsa
1 package extra fine shredded mozzarella and cheddar cheese
1 package taco shells, broken into pieces as you use them

Layer of broken taco shells on bottom of 9x12 casserole
half the beans
Half the salsa
1/3 the cheese
Top with remaining taco shell fragments and cheese

Bake in 375 oven until cheese is melted and brown. Serve with chopped onion, tomato and sour cream.
