Hot and humid erev yom tov. I need to straighten out hte living and dining rooms because I have guests (none begged off) on Tuesday.

Pasta tossed with ricotta cheese, sun-dried tomatoes, garlic and pumpkin seeds

Tomorrow lunch
spinach/tomato omelets
fruit salad with yogurt

Tomorrow dinner:

Tuesday lunch:
cucumber-yogurt soup
cold salmon and pasta
Greek salad

Plus appropriate wines and sodas.

Note that other than the pasta dish, everything is to be made right then, and that everything cooks fast if it cooks at all. There's much to be said for a holiday that mandates dairy.

Tomorrow dinner:

Read as a menu, that's rather disturbing *g*.

Oh good -- I'm glad I'm not the only one who reacted that way. :-)

I had to re-read that one too. *g*

It all sounds very yummy.

Have a good yontif!

Sounds wonderful. When you aren't busy entertaining friends, I'd love the pumpkin seed-pasta-ricotta recipe!

unfortunately, it's not so fun if you can't tolerate most dairy products. I've had to beg off from Shavous invites the past few years from families I'd like to spend time with, but I feel back picking at only the pareve dishes. I miss dairy :(

I hope your meals go well!
